There’s this great little pizza place near my family’s cabin in Northern Minnesota - in a town called Hackensack if we’re being precise - and the pizza place is called Lucette’s Pizza and Pub. If you need a quick northwoods lesson, Lucette Diana Kensack is the wife of the Great Paul Bunyan.
Anyways - this pizza place has a pizza called the Garbage Can Pizza. Sounds gross, but the idea is that they throw everything in it that you might toss in the garbage. We’ve got a few veggies on hand that needed using, so tonight we made Wilke Garbage Can Frittata:
1/2 yellow pepper
1/2 package of mushrooms
1//4 red onion
1/2 cup chopped spinach (mine was the frozen variety - we’re not fancy)
2 cloves garlic
8 egg whites
1/4 cup shredded cheese
I chopped the veggies and sauteed it all in olive oil - combined them with the egg whites and cheese, tossed in a little salt and poured it all into a round pan that had been brushed with olive oil. The oven was set to 350 and it took about 20 minutes to cook.
Wonderful! We’re already scheming on ingredients for the next time, to include goat cheese (of course), broccoli, and maybe even cottage cheese. Another plus is that this should reheat nicely tomorrow morning - a good change from the regular oatmeal or cereal.
