Sometimes you don’t wake up early enough for breakfast. Today was one of those sometimes.  Our solution on those days is BFD - Breakfast for Dinner.  Tonight, it was homemade pancakes.
3/4 cup quick cooking oats
3/4 cup whole wheat flour
1 cup of milk
1 tablespoon sugar
2 tablespoons vegetable oil
2 teaspoons baking powder
1 egg
dash of salt
Somewhere in the process of making this for myself I mixed up my tablespoon and my teaspoon. I was too far lost to try to use the 3 teaspoons = 1 tabelspoon conversion so I just went with it. Didn’t turn out too bad!
As you know, mix it up, cook it up and eat it up.
I think the key to evenly cooked pancakes is medium heat, and waiting until the pancake bubbles to flip.
On a personal note, eggs and pancakes are two of the main reasons that I keep non-stick pans around.  I don’t know what my issue is, but no matter how much I spray or grease a cast iron or stainelss steel skillet, my eggs and pancakes always end up plastered to the bottom of the pan.
Anyway, now that we’ve had our  breakfast, we’re ready for bed. Night!
