Italian Grilled Caprese Sandwich
I made an Italian grilled sandwich last spring and loved it. I’m not really sure what makes it Italian - but I do know that it is delicious.
So yesterday, as I was craving Caprese Salad - I thought, why not pair it with the Italian grilled cheese - thus creating Wilke Italian Grilled Carpese Sandwich. (My recipes are getting too long in the tooth. I need to work on that.)
Recipe as follows:
1 Roma Tomato
1/2 pound fresh mozzarella, thinly sliced into medallions
Fresh Basil - 6 leaves or so
Balsamic Vinegar - I used Annie’s Balsamic Vinaigrette Dressing
2 Eggs
1 cup bread crumbs
Slice ciabatta bread into sandwich style slices.
Layer one side of ciabatta bread with 3 mozzarella slices, 3 tomato slices and 2 basil leaves. Drizzle balsamic vinaigrette over all. Salt and pepper to taste.
Add 2nd slice of bread. Dip entire sandwich in beaten eggs. Transfer to shallow plate with bread crumbs and coat entire sandwich in bread crumbs.
Set non-stick skillet to medium heat and drizzle with olive oil (pan should be coated with oil).
Place sandwich in skillet- turn after 3 minutes or so, until golden brown with melted cheese.
Serve with additional dipping viniagrette, if necessary.
Sweet baby Jesus. This was delicious. And the PERFECT spring/summer meal. I’d even try it again, panini style, without the breadcrumbs.
Pair with a glass of wine (for you classy folk) or a whiskey (for you feisty folk like me) and you’ve got a perfect Friday night.
